Being Me. (Recipe's)

I am the main cook out of me and hubby and I am a quick cook. I like to use as less ingredients as possible and I like the meals to be done in less then 30 minutes. I love the 4 ingredients cook books. They're so simple. I especially love the dip and dessert recipe's. Here are some recipes I love from these books:













BASIC CHEESECAKE: (serves 8)
Ingredients:
  • 250g cream cheese, softened.
  • 295g can condensed milk.
  • 1 sachet gelatin.
  • Bickie base (Recipe below).
In a medium bowl, beat cream cheese until smooth. Add condensed milk and mix until combined. Dissolve gelatin in three tablespoons of boiling water, stirring vigorously until dissolved. Add to mixture. Pour into bickie base and chill for at least four hours prior to serving.

BICKIE BASE:
Ingredients:
  • 3/4 packet of sweet bickies.
  • 5 tablespoons of melted butter.
Blend the bickies in a blender or food processor. /transfer to a bowl and add the melted butter. Mix well and then press into the bottom of a cheesecake dish. Chill before using.
(add a dash of nutmeg or cinnamon for flavour)

STRAWBERRY PIE:
Ingredients:
  • 2 packets of strawberry jelly crystals.
  • 1 cup of boiling water.
  • 300ml whipped thickened cream.
  • 2 punnets chopped strawberries.
  • Pie crust (Use bickie base recipe above or chocolate pie crust recipe below)
Combine jelly and water and mix well. Cook in fridge until it begins to thicken. Fold in cream and strawberries. Spoon into biscuit crumb pie crust.
Fridge for hours before serving.

AVOCADO SALSA: (Makes 1 & 1/2 cups)
Ingredients:
  • 1 large ripe avocado.
  • 1/2 vine ripened tomato.
  • 1/2 red onion.
  • 3 tablespoons of chopped coriander.
Dice avocado, reserving seed. Dice tomato and onion. Add all ingredients together and mix well. Place the seed back into the dip to prevent discolouration and refrigerate until needed.


HONEY BAKED CHICKEN (Serves 4-6)
Ingredients:
  • 1 packet of french onion soup.
  • 3/4 cup white wine or water.
  • 3 tablespoons of honey.
  • 1 kilo chicken pieces.
Combine french onion soup, honey and white wine/water and pour evenly over chicken pieces in a shallow ovenproof dish. Cover and bake at 160 degrees for 1 hour , remove cover and back for another 30 minutes.

MINI CHEESE QUICHES (Makes 6) *Hubby loves these!!
Ingredients:
  • 6 slices of bread, crusts removed.
  • 50g cheddar cheese, grated.
  • 1 tablespoon of mixed herbs.
  • 2 large eggs, lightly beaten.
Preheat oven to 200c. Press bread into non-stick muffin cups. Fill each cup with cheese and herbs and a sprinkle of pepper. Top each  with egg mixture and bake for 15 minutes or until set.


Some of my other favourite easy and quick recipe's (I'm a cheat, I know ;) ):



CHOCOLATE PIE CRUST:
Ingredients:
  • 25 chocolate sandwich cookies (eg oreo).
  • 1/3 cup of melted margarine.
Process cookies until crumbs. Add margarine. Stir till combined. Press mixture in a pie pan. Chill before using.

CHICKEN FETTUCCINE: (Serves 4)
Ingredients:
  • 375grams fettuccine pasta.
  • 2 tablespoons of olive oil.
  • 400grams chicken breast fillets - thingy sliced.
  • 1 tablespoon of garlic.
  • 2 tablespoons of chili.
  • 3 tablespoons of basil.
  • 250 grams cherry tomatoes- halved.
  • 1/2 cup kalamata olives - halved (I don't use the olives)
  • 50grams of baby rocket.
  • 1/2 cup of Parmesan cheese.
Cook the fettuccine pasta in a large saucepan of boiling water. Meanwhile heat olive oil in a large deep-frying pain. Add chicken and cook for 5 minutes or until browned and almost cooked through. Add garlic, chili and 2 tablespoons of basil. Stir. Add cherry tomatoes and olives. Cook for 5 minutes or until tomatoes start to soften. Drain pasta when cooked and add to the fry pan. Add 1 tablespoon of basil and the baby rocket. Add Parmesan cheese now or to serve. Toss to combine. Serve!

EASY RISOTTO: (Serves 6-8)
Ingredients:
  • 1 diced onion.
  • 60grams of butter.
  • 4 diced rashers of bacon - or cooked chicken/ham.
  • 3 chicken or beef stock cubes
  • 2 cups boiling water.
  • 1 cup long-grain rice.
  • 1 cup assorted vegetables (I personally use 2 cups of sliced mushrooms)
Place onion, butter and bacon/chicken/ham (& mushrooms if you are like me) in a 3 litre dish. Cook for 3-4 minutes. Stir. Dissolve stock in water and add to onion and bacon. Add ingredients. Cover and cook for approximately 25 minutes or until ready. Stirring only twice. Leave for 5 minutes, stir, serve!

What I've Learnt About Me This Week:
I may not spend hours in the kitchen or I may not 'slave' over a meal but just because I opt for easier and quicker meals I can still make meals that are just as delicious :).
